kolhapuri Jhunaka-Bhakar

Jhunka-Bhakar is a simple food of rural Maharashtra. This dish is traditional dish. It is also known as poor mans food. This recipe simple and quick recipe comes in handy. It is based from gram flour. It is not harmful for health for child's, adults, older peoples.


Ingredients:

1. 2 cups gram flour
2. 1/2 cup dry coconut
3. 2 tbsp ginger-garlic paste
4. 2 green chilies
5. 2 tbsp oil
6. 1/2 tbsp Mustard seeds
7. 1/2 tbsp Cumin seeds
8. Turmeric Powder
9. 3 cup Water
10. 1 Onion Chopped
11. Curry leaves

For Masala:

Ginger, Garlic, Dry coconut, chilies are grind together.

Method:
1. Heat oil in pan. Add Mustard and Cumin seeds.

2. Add Chopped onion and fry till it comes golden color.Add Curry leaves.

3. Add above masala and fry it properly.

4. After fry it. Add Water. Boil it properly.

5. Then add Grinded Chana dal.

6. Cover the lid and cook it properly. 

7. Serve it with Roti.

Kolhapuri Chatakdar Misal-Pav

There are many variations of making misal in maharashtra but Kolhapur city is mostly famous for spicy food "Misal - Pav" is one of them dish. It is breakfast dish. It is soooooooo spicy and Tasty breakfast. Eating "Misal-Pav" is to fill the stomach. Misal is a spicy curry prepared with moth beans or matki (in Marathi) and served with chopped onions, tomatoes, fresh coriander and lime along with some green and tamarind chutneys. 


Ingredients:


1. Oil - 4 tbsp
2. Pitcher - 2 cups
3. Mustard seeds - 1/2 tbsp
4. Asafoetida - 1/2 tbsp
5. Turmeric Powder - 3/4 tbsp
6. Salt - To taste
7. Ginger - 1/2" pieces
8. Garlic - 4 cloves
9. Onions Chopped - 2 medium
10. Cinnamon - 1"
11. Cumin seeds - 1 tbsp
12. Goda Masala - 1 1/2 tbsp
13. Coriander seeds - 1 tbsp
14. Dry coconut - 2 tbsp
15. Tomato chopped - 1 medium
16. Red chili powder - 2 tbsp

For Serve:


17. Farsan - As required
18. Lemon Wedges - As required
19. Potato cubes deep Fry - 1 cup
20. Fresh coriander leaves chopped - 1/4 cup
21. Onions Finely chopped - 2 medium
22. Tomato Finely chopped - 2 medium
23. Pav - As required
24. Curd - As Required





Method:

For Masala:

Grind Dry coconut, Ginger, Garlic, Coriander leaves, Red chilies. 

1. Soak pitcher for 8-10 hours. Remove water from them.

2.  Heat oil in pan and add Cumin seeds and mustard seeds.

3. Add chopped onion fry till golden color.

4. Then add Chopped tomatoes.

5. Add above masala and fry it properly.

6. After fry masala add Salt as to taste and red chili powder.

7. Add soaked pitcher and fry it in masala.

8. Then add some water and close the lid and let it cook around 20-25 minutes.

9. After cook switch off the gas.

10. Now Misal is ready for garnishing.

11. Take it in bowl and add Farsan, Chopped onion and tomatoes, Curd, Chopped Coriander leaves.

12. Serve with Pav.

13. Finally Kolhapuri Chatakdar Misal - pav is ready for eating.

Kolhapuri Tambada Rassa



Ingredients:

1 Kg of Mutton
1 Tbsp Red Chili Powder
1 Cup Oil
1 Tomato
4 Medium Size Onion
Coriander Leaves
1″ Ginger
8/10 Garlic Cloves
1/4 Tbsp Turmeric Powder
2 Tbsp Salt
2 Tbsp Sesame Seeds
4 Black Cardamom
2 Tbsp Fresh Coconut
2 Tbsp dry Coconut
1 Tbsp Coriander Powder 
1 Tbsp Cumin Powder
3/4 Black Pepper
3/4 Cinnamon Sticks
4/5 Cloves
1 Tbsp Poppy Seeds
2 Tbsp Sesame Seeds 
2 Tbsp Ghee
2 Tbsp Kolhapuri Masala





Method:

    1.     Wash mutton pieces,  mix them with turmeric powder, salt & ginger-garlic paste in a bowl.
1  2.    Marinate Mutton & keep it aside for an hour.
   3.    Heat oil in a Pan and Add 4-5 cloves, 3/4 Black Pepper, 3/4 Cinnamon Sticks, Onion cut lengthwise, 2 Tbsp Sesame Seeds & Dry Coconut.
    4.    Fry it until the onion becomes light brown. After that put this in a grinder & make paste (Use little water).
   5.    Now take oil in a big pan & Heat it. 
   6.    Add bay leaves, cloves, cinnamon, pepper, poppy seeds, onion-chopped. Fry till light brown & Add tomatoes.
   7.    Now add mutton & salt, stir it. Cover pan with a lid, keep water onto lid.
   8.    When water on lid starts boiling, add the water into the pan. Close lid, let it cook for some time.
   9.    When mutton is half cooked (10 min) add the grinded masala & Kolhapuri Masala. Mix it well.
   10. Add 2 Tbsp of Ghee.
   11.   Close the lid & let it cook for around 15-20 minutes.
   12. Now switch off the gas, cover lid tightly for 15 min.

   13. Garnish with freshly chopped cilantro.
